An Easy Recipe for Game Day Lasagna Cupcakes

On game day, food is the one thing sports fans can count on. It doesn’t matter who wins the big game when there’s a tasty spread, right?

These cupcake-sized lasagna bites are the perfect game day snack for a watching party. Best of all, you can make them ahead of time so that your day-of party prep is kept to a minimum. Just reheat in the microwave or oven and serve.

What you need:

  • 1 (17 oz.) package puff pastry
  • 1/3 lb. ground beef
  • Salt and pepper
  • 24 oz. pasta sauce
  • 1 ½ c. Parmesan cheese
  • 2 c. mozzarella cheese
  • Cupcake or muffin tin
  • Butter or cooking spray to grease tins

Step 1
In a skillet over medium-high heat, cook ground beef until browned. Once cooked, drain beef and season with salt and pepper.

Step 2
Place pasta sauce, cooked beef, Parmesan cheese, and mozzarella cheese in four separate bowls.

Step 3
Grease cupcake tins. For each cup, cut a circular piece of puff pastry for the bottom and a rectangular strip for the side. Position the pieces into each tin.

Tip: Use scissors, the rim of a glass, or a circular cookie cutter to cut out even circles.

Step 4
Assemble the lasagna. Add the following layers to each tin, in this order: pinch of Parmesan, pinch of mozzarella, 1 tablespoon pasta sauce, 1 tablespoon ground beef. Top with another round layer of the puff pastry dough, and then repeat the layers. Top each lasagna with a final pinch of mozzarella and Parmesan cheeses.

Step 5
Bake at 375 degrees Fahrenheit for 20-25 minutes, or until the edge of the dough is a light golden brown. As the lasagna cupcakes cool, run a knife around the edge of each one to loosen it from the tins. Allow the cupcakes to cool for 10 minutes, then flip the pan over to remove each cupcake. Place on a wire rack and cool completely before storing or serve warm.
